Nikaku Bangkok serves Edomae sushi omakase in the lobby of W Bangkok. The kitchen follows a method carried over from Kyushu, cooking ingredients lightly and using natural seasonings to bring out their flavor. The chef explains each stage of the course in English, drawing on a lineage of more than 60 years from the two-Michelin-star main restaurant in Kokura, North Kyushu. There is no alcohol pairing list.
